Microwave Cinnamon Balls
Perfect for serving to guests at parties, or giving as a holiday gift, these Cinnamon Balls are scrumptious and will fill your kitchen with a delightful aroma. The ground almonds make these little cookies very moist. When cooked, they should be very soft inside with a strong cinnamon flavor. This recipe makes 24 cinnamon balls — enough to put 8 each in three decorative mugs. When completely cooled, store the cinnamon balls in an airtight container. If you plan to keep them for a while, it is a good idea to freeze them as they can be thawed very quickly when needed.

Microwave Banana-Cherry Cake
1½ cups ground almonds
1/3 cups sugar
¼ tbsp. ground cinnamon
Mix together ground almonds, sugar and cinnamon.
2 egg whites
In separate bowl, whisk the egg whites until they begin to stiffen.
Fold whisked egg whites into almond mixture.
Wet your hands with cold water and roll small spoonfuls of the mixture into smooth balls. Place well apart in a circle on waxed paper.
Place in microwave oven. Cook 2 minutes 30 seconds (_____) at 100% power.
Slide balls off of waxed paper and place on plate to cool. Roll cinnamon balls in powdered sugar.

(1) To make ground almonds, place 2 cups blanched almonds in Ninja Master Prep Food Processor.
(2) The almonds turned into a perfect flour consistency.
(3) Place dry ingredients in mixing bowl.
(4) Mix dry ingredients together.
(5) Whisk the egg whites until they begin to stiffen. Fold whisked eggs into almond mixture.
(6) Fold whisked egg whites into almond mixture.
(7) Roll mixture into smooth balls. Place in circle on waxed paper.
(8) Slide the waxed paper off plate on to microwave tray. Cook.
(9) Roll balls in powdered sugar.
(10) Serve or give as holiday gift.
